Course Overview
This module provides learners with the knowledge, skills, and attitudes required to maintain high standards of food hygiene, personal hygiene, sanitation, and food safety in food preparation, catering, and galley operations. It emphasizes the prevention of food contamination and foodborne illnesses through proper handling, storage, preparation, cooking, serving, cleaning, and waste disposal practices.
Learners will develop an understanding of food safety hazards, cross-contamination, temperature control, personal hygiene, cleaning and sanitizing procedures, safe food storage, pest control, and proper waste management. The module also covers the importance of complying with relevant food safety, health, and sanitation regulations and maintaining a clean and safe food service environment.
Upon completion of the module, learners should be able to apply appropriate food hygiene and sanitation practices, identify potential food safety risks, prevent contamination, and maintain hygienic working conditions in accordance with established food safety standards and workplace procedures.
